{RECIPE} Cheesy Chicken Chili...in the crockpot!

Hi there! I have a super simple recipe to share with you! This is a great go to for when you need something quick and healthy but don't feel like cooking. Virtually no effort is involved here. Yay!



Cheesy Chicken Chili
3-4 frozen chicken breasts
Jar of your fave salsa
2 cans chili beans
Cup of cheddar

Place chicken in crock pot and pour salsa on top. Cook on low for 7 hours. Shred and place back in crock. And beans and cheese and cook on low for another 30 minutes.

We like it over rice with a little extra cheese, green onions and sour cream. Also great as lunch the next day but I skip the rice and add a little avocado!

{Recipe: A Weeknight Favorite}

Hi friends! I hope you are having a lovely week! I am SO glad summer has finally come! I am playing catch up this week and then I have big plans to enjoy life at a little slower pace. Simplify is my motto for this summer.

I want to share a recipe with you all today! This is one of our favorite weeknight dinners. Right now I call it “3 ingredient Chicken Tacos”, but I am open to more creative names if you’d like to offer one up!

Okay…this is the easiest recipe EVER. Ready…

Ingredients:

Frozen Chicken Breasts 3-4, A jar of your fave salsa, A packet of taco seasoning.

Directions:

Place FROZEN chicken breasts in crock pot, sprinkle with taco seasoning, top with salsa. Cook on low for 6-8 hours. I like to stir mine halfway. Shred chicken. It falls about really easily. I usually shred with tongs.

I typically serve them with your standard toppings and rice and beans. We get lots of leftovers from this too so I like to make nachos or taquitos later in the week.
