Who’s a Weight Watcher?

If you are a Weight Watcher like me (I am actually an employee too!) you probably LOVE your handy dandy pocket guide! However, you probably don’t love how beat up it gets while living in your purse. Of course the plastic sleeve we give out in the meeting is nice to have. And we have the wallet looking snap covers…functional, but not as cute as I would like. I thought to myself “hey, I could totally make a cute one with fabric!”…..and here it is!

This one is for a Weight Watchers co-worker, but I am for sure going to make one for myself too! Let me know if you are interested and I will whip up a few for the shop. Just let me know what colors you’d like to see!

Menu for the week…

I am loving this cookbook right now! Kind of forgot I had it, but it has been GREAT to have the past couple of weeks because we’ve been so busy. Our Monday and Tuesday meals for the week are out of this book.

Monday: Potato Spinach Frittata with Garlic Bread and mixed fruit (spinach from our garden!)

Tuesday: Broccoli Cheese Tuna Casserole (broccoli from our garden!) with green salad and mixed fruit

Wednesday: Crock-pot Chili with Brown Rice

Thursday: Leftover buffet

Friday: Bday party

Saturday: Another bday party

Sunday: not sure…maybe 1/2 price apps at Fridays again!

Monday: Misc leftovers or sandwiches

Tuesday: The pizza and salad we didn’t eat last week

Wednesday: Going to a bday/Cinco de Mayo party…I hear it’s tacos and marg’s…awesome :)

Thursday: Four Cheese Pasta Florentine, with green salad, and garlic bread

Friday: Disneyland with church friends!  Picnic dinner.

Menu Plan Monday!

We have a busy week ahead so making sure I had the dinner menu set was a huge goal for me. We have some tasty things on our menu this week! All have Weight Watchers Points and some will have links. Check out Organizing Junkie's website for even more great menu planning and organizing tips. Enjoy!

Monday: Teriyaki Beef Bowls 5pts

Tuesday: Roast Chicken with Red Potatoes and Green Beans 7pts

Wednesday: Pesto Chicken with Sweet Potatoes 8pts from my favorite slow cooker site! Great recipes so check it out!

Thursday: Black Bean Chicken Enchiladas (using leftover roast chicken) with brown rice and salad 10pts

Friday: Pizza Night! Turkey pepperoni with homemade whole wheat crust. We use the Muir Glen Organic Pizza Sauce…AMAZING and roughly 6pts a slice.

Menu Plan Monday




Hi everyone! It's been forever since I updated the blog. Here's what is on the menu this week.

Monday: CROCK POT DAY!!! Pasta Fagioli (from the crock pot 365 website), garlic bread, and salad.
Tuesday: Gorgonzola Fettuccine (Cooking Light), salad
Wednesday: Maple Glazed Salmon (Cooking Light), brown rice, sesame green beans.
Thursday: Chicken Tamale Casserole (Cooking Light), salad
Friday: PIZZA NIGHT! Buffalo Chicken Pizza, salad.

Recipe: Chicken Tamale Casserole


I love to share new recipes :) Here is a delicious one we have tried out several times. I got it from Cooking Light. Here is the link, but I will also post the full recipe with NI below. It's about 6-8 WW Points depending on what ingredients you use.

Ingredients

  • 1 cup (4 ounces) preshredded 4-cheese Mexican blend cheese, divided
  • 1/3 cup fat-free milk
  • 1/4 cup egg substitute
  • 1 teaspoon ground cumin
  • 1/8 teaspoon ground red pepper
  • 1 (14 3/4-ounce) can cream-style corn
  • 1 (8.5-ounce) box corn muffin mix (such as Martha White)
  • 1 (4-ounce) can chopped green chiles, drained
  • Cooking spray
  • 1 (10-ounce) can red enchilada sauce (such as Old El Paso)
  • 2 cups shredded cooked chicken breast
  • 1/2 cup fat-free sour cream

Preparation

1. Preheat oven to 400°.

2. Combine 1/4 cup cheese and next 7 ingredients (through chiles) in a large bowl, stirring just until moist. Pour mixture into a 13 x 9–inch baking dish coated with cooking spray.

3. Bake at 400° for 15 minutes or until set. Pierce entire surface liberally with a fork; pour enchilada sauce over top. Top with chicken; sprinkle with remaining 3/4 cup cheese. Bake at 400° for 15 minutes or until cheese melts. Remove from oven; let stand 5 minutes. Cut into 8 pieces; top each serving with 1 tablespoon sour cream.

Menu Plan Monday!

Hi Friends! I am anxiously awaiting my mom's arrival :) She should be here in a few hours. I love when she comes to visit! We have lots of fun Christmas-y things planned this week and I can't wait. Here is my menu plan for the week. Once again, let me praise my Google Calendar and ListPlanIt.com for making menu planning so wonderfully easy! Here is what we are eating this week...

Monday: Roast Chicken (in Crock Pot), Salad, Garlic Bread, and some friends coming for dinner are bringing a lasagna too...YUM.

Tuesday: BBQ Ribs (in Crock-Pot), cornbread muffins, broccoli slaw

Wednesday: Pecan Crusted Salmon, green beans, garlic bread

Thursday: Green Chili Soup (in the Crock Pot), leftover cornbread muffins

Friday: Disneyland! We'll be bringing Subway to avoid buying food there.

Saturday: Southwest Turkey Mac

Sunday: Leftover Buffet

Menu Plan Monday

Hey everyone! I hope you had a great Thanksgiving! Ours was delicious :) We decorated the house this weekend, inside and out. All I have left is my dining room and I am hoping to get to that today. Anyhow, here is my menu for the week. I hope it inspires you to get in your kitchen (even if it's tiny like mine) and make something yummy! Head over to orgjunkie.com for more menu ideas. Monday: Mexican Pot Roast served with tortillas, rice, beans, and taco fixings...I;m feeding a crowd for football!
Tuesday: Chinese Lemon Chicken served with Brown rice and Broccoli
Wednesday: Greek Spaghetti served with Garlic Bread and Salad
Thursday: Oven "Fried" Chicken served with Orzo Salad
Friday: Homemade Pizzas...Pesto Veggie and Caramelized Onion with Gorgonzola
Saturday: I need to make an appetizer or dessert for a holiday potluck...any ideas?
Sunday: Soup Sunday! I am thinking chili sounds good this week.

Menu Plan Monday

Remember how I told you all I was planning to nail down our top 21 favorite meals and plug them into my Google Calendar and hope to never plan another weeknight meal again??? Well...I did it and I am really excited about it. You just save them to repeat once a month on that day then on Meal Plan Monday, you just print your calendar out that already has all your meals for the week! One thing that I really like about this method is that I can still move the meals around to make sure what we have on the menu will suit what we are doing that week. For example, we host Monday Night Football at our house and something like chili dogs is a dinner that I would do on Monday but if Greek Spaghetti pops up, I can just switch them out. Easy Peesy. Monday: Chili Dogs served with coleslaw and potato chips...football food!

Tuesday: Anniversary Dinner...we are going out for Sushi!

Wednesday: Pumpkin Ravioli served with green salad and Garlic Bread

Thursday: Happy Thanksgiving! We are Brining/smoking a 14.5 lb turkey and I am making pecan bacon dressing, creamed corn, and pecan pie bars. We are taking everything over to my husband's grandparents house.

Friday: It's a friend's birthday and we are going out!

Saturday: Soup of some sort...we are decorating for Christmas!

Sunday: Potluck dinner at church. I am bringing potato salad and cupcakes.
