Menu Plan Monday!

Sorry I’ve been kind of bad about blogging lately. Trying to enjoy these last few days of summer not in front of my computer! But have no fear, there are several fun blog posts in the works this week…sewing, crafting, cooking, AND Carter’s birthday post (better late than never!). I’m making up for lost time for sure!

For many of us, this is the first week of the new school year. We are crazy psycho busy this week so meal planning is essential. Really simple meals this week folks! Check out OrgJunkie for more great menu planning ideas. What’s on your back to school menu this week?

Monday: Hamburger Helper, bag Caesar Salad (don’t judge me! I spent 7 hours back to school shopping today!)

Tuesday: Taco Tuesday! Crock Pot Tacos with brown rice, and green salad

Wednesday: First day of school! Crock Pot Chicken Divan over brown rice

Thursday: Leftover Buffet

Friday: Homemade pizza, salad and Red Box…what should we rent, hmmm?

  1. mmm. I think I may need your crock pot chicken divan recipe! I grew up with that delish casserole - and thought it could be fun to put in in the crock!

    I know how it is - crazy week, this first week of school - I'm sorta wandering the house aimlessly with my dog looking for my daughter....sigh ..... I tear up thinking about how fast the time flies!!

  2. Hi Tracy! I know time is flying by so fast. Today they're in Kindergarten tomorrow they'll be graduating high school and leaving the nest for good! Sniff. I wanted to email you the recipe but your email isn't linked to your blogger account so I can't reply to you directly...hope you see this! Spray your crock pot, layer in 4 thawed chicken breasts, a bag of frozen chopped broccoli, and pour the sauce on top. The sauce is 2 cans of cream of mushroom soup, 1 cup mayo, and 1/2 tsp of curry powder all stirred together. Cook on high for 3-4 hours. Serve over rice so soak up all the yummy sauce!
